  • 1 pound salmon filet, cut into 3 pieces
  • ¼ cup seasoning sauce 
  • ¼ cup lime juice
  • 2 tablespoons granulated sugar
  • 1 tablespoon ginger, peeled and finely chopped
  • 1 teaspoon garlic, finely chopped
  • 2 tablespoons olive oil
  • Hot cooked rice
  • Cooked assorted vegetables

Step 1

  1. Mix seasoning sauce, lime juice, sugar, ginger and garlic in a medium bowl.  Place salmon in sauce; mix well to coat all sides.  Cover; refrigerate for 1 hour. 

Step 2

  1. Turn salmon once while marinating.  Heat oil in large skillet over medium-high heat. 

Step 3

  1. Cook salmon (reserving marinade) for 5-7 minutes on each side or until it flakes easily.  Do not overcook.  Remove from skillet; set aside.

Step 4

  1. Cook reserved marinade in same skillet for 3 minutes or until slightly thickened. 

Step 5

Serve sauce on the side with cooked rice and vegetables.

  • 2 tablespoons olive oil (Goya)
  • 8 fish fillets
  • 1 medium onion, diced
  • 1 green pepper, diced
  • 8 cloves garlic, minced
  • 3 cups Valenciano Rice 
  • 5 cups water
  • 1 teaspoon salt
  • 3 packets chicken bouillon 

  •  2 packets Sazón with Azafran 

  • 16 little neck clams, rinsed

    • 16 mussels, scrubbed and bearded
    • 1 pound medium shrimp, peeled and deveined

    • 1 pound medium scallops, muscle tab removed

    • 1 (8 ounce) can tiny peas, drained or ½ cup frozen peas

    • ¼ cup Pimientos, diced, for garnish (Goya)

Step 1

Preheat oven to 400°F.  In a paella pan, or large casserole, heat olive oil over medium heat.  Cook fish fillets until almost done, remove and keep warm.  In the same pan, stir in the onion, green pepper and garlic. 

Step 2

Cook until onions are translucent.  Stir in rice and cook for 2 minutes, coating the rice with the oil.  Stir in water, salt, bouillon and Sazón.

Step 3

Cut fish into pieces and return to the pan. Bring to a boil, cover tightly, and place in oven.  After 15 minutes, stir in the remaining seafood and peas. 

Step 4

Cover and return to oven for 15 minutes.  Remove from oven and check all ingredients for doneness. 

Step 5

Return to oven if needed. When fully cooked, sprinkle the pimientos over the top, cover and let the dish rest for 10 minutes in warm oven.

  • 4-1/2 cups boiling water
  • 1 lb. uncooked medium shrimp, peeled and deveined
  • 10 mussels, well-scrubbed

    3 cups red and green bell peppers cut into strips

    1 can (14.5 oz.) diced tomatoes, undrained

    3/4 lb. cod or tilapia fillet, cut into ½ inch chunks

    1/4 tsp. Bijol or 3-4 threads of saffron (optional)

    1 cup peas

    1 tbsp of chopped cilantro

Step 1

In deep 12-inch skillet, heat 1 tablespoon oil over medium heat and cook onion, bell pepper and garlic, stirring occasionally, 2 minutes or until onion is tender.

Step 2

Add remaining 1 tablespoon oil and add parboiled rice, 1/4 tsp. Bijol or saffron threads, stirring frequently, until rice is golden, about 8 minutes.

Step 3

Add tomatoes, stir in Knorr® Shrimp flavor Bouillon Cubes blended with boiling water. Simmer covered over low heat 15 minutes

Step 4

Stir in shrimp, mussels and fish. Simmer covered 15 minutes or until rice is tender, shrimp turn pink and shells open. Discard any unopened shells.

Step 5

Step 1

Add ¼ cup passion fruit cocktail juice to medium bowl. Sprinkle gelatin over surface; do not stir. Set aside until gelatin softens, about 5 minutes.

Step 2

Bring to boil remaining passion fruit cocktail juice in small saucepan over medium-high heat. Whisk the hot juice into the gelatin mixture until smooth. Pour into medium bowl. Chill until just room temperature, about 15 minutes.

Step 3

Meanwhile, divide fruit evenly among four 6-8 oz. glasses. Slowly pour passion fruit mixture over berries, then chill, covered, until firm, at least 6 hours. Top with whipped cream before serving, if desired.

  • Sweetened whipped cream, for serving
  • Fresh raspberries, for serving

Step 1

Preheat oven to 350°F. Set an 8” square baking dish (1 quart) and larger roasting pan (for a water bath) nearby. Bring a teakettle of water to a simmer.

Step 2

In large bowl, whisk together coconut oil, egg yolks and 1 cup sugar until blended. Whisk in coconut milk, then gradually whisk in flour until combined. Whisk in fruit pulp.

Step 3

In medium bowl, beat egg whites to soft peaks, with electric mixer. Gradually beat in remaining ¼ cup sugar until firm peaks form. Using a whisk, fold whites into passion fruit batter just until combined. Pour into baking dish, and set in roasting pan. Add simmering water to roasting pan to come about one-third up the sides of the baking dish.

Step 4

Place roasting pan with baking dish inside it in oven. Bake until golden brown and top is set when lightly pressed, about 40-50 minutes. Remove cake from water bath and let stand at least 15 minutes. Serve warm with sweetened whipped cream and raspberries.
